Happy St. Patrick's Day!

We do not make a huge deal out of St. Pat's Day, but we do wear green. I went the extra mile this morning and made shamrock pancakes with green sprinkles. We are on spring break this week and with no school I had some extra time for a fun breakfast.
** Side note: Speaking of pancakes, does anyone have a healthy, but yummy recipe for pancakes? This is a whole other post that I'm not sure will ever get posted, but I am really trying to eat more "whole" foods. Lots of fruit, veggies, whole grains and not as much processed food. I'm not sure Bisquick falls into that category. :)

We left the house around 10:00 to go get the girls' hair cut and then headed to the park with some friends. It is 75 degrees here and beautiful!!! I wish it would stay like this forever, but I'm sure that the crazy Arkansas weather will bring the cold back again.

I don't know how much healthier it is but the Aunt Jemima whole-wheat pancake mix is amazing. Nate likes it better than the regular kind which should speak for itself.

Hey. My girls got their hair cut today too! We really like Fiber One mix. Every other mix I have found has part. hydrogenated oil in it- which is really bad for you. I haven't found a good recipe for ones you make yourself. They never turn out right. The fiber one mix tastes the best of any I have ever had! Well, besides IHOP. :)

Oh my! I almost cried when I saw Emma in that picture in the middle of the swing, she looks so old and big- how did that happen??

Pancakes... We typically use a mix (Fiber one is my favorite) and then I stir in ground flaxseeds and some form of fruit (or top it with fruit). And if you can't use the Fiber one Mix, you can use regular mix and stir in ground fiber one cereal with flaxseeds too.

Sweet Potato Pancakes

1 cup water
1/2 cup sweet potato puree
1/4 teaspoon cinnamon or pumpkin pie spice (optional)
1 cup pancake mix
Nonstick cooking spray
1 tablespoon canola or veg. oil
pure maple syrup, for serving

1. Mis water, sweet potato puree, and cinnamon. Add pancake mix and stir to combing. Batter should be lumpy.
2. Coat a griddle or large nonstick skillet with cooking spray and set it over med-high heat. When the pan is hot, add oil, and spoon the batter onto the griddle or pan, using 1/4 c. batter for each pancake.
3. Cook until bubbles form on top of the pancakes and the batter is set, 2-3 min. Then use a spatula to flip the pancakes and cook them until golden brown on the other side, 2-3 min.

This is from that Deceptively Delicious cookbook and ALL my boys like them. It still uses pancake mix, but maybe you could substitute the one Kate was talking about? That might be delish!
